Like I said, the remote computer is never the same, always changing; might be local one time, might be through a Cisco VPN another. I was thinking one shared folder and shortcuts within it to the additional folders I need access.

But that is not the way to do it, so I am good now. If the computers are in a Workgroup, you an create a Homegroup. Join the other computers to the Homegroup, then on the computer where you want to share something, right click it and click Share with and select the Homegroup.

This is what I do at home. My home server is now a Windows 7 box used to run a server OS and the whole 9 yards, just got tired of it and this works perfect.

Hopefully since you are running Windows 7 you have better luck with system restore 9 out 10 fail on Windows 10 PC's. Additionally, you can check if Network Discovery is Disabled on your Computer.
